Prepare the Wings:
-
Take X grams of chicken wings and cut them in the middle between the bones so you have long strips.
-
-
Marinade:
-
In a bowl, add garlic powder, onion powder, soy sauce, and a bit of dark soy sauce if you want that extra color. Remember, in Chinese cooking we often say "色香味," which means we aim for great color, aroma, and taste. Add a pinch of salt and a pinch of white pepper. Then toss in some cornstarch to lightly coat the wings. Let it marinate for about 30 minutes.

Prep the Aromatics:
-
While the wings are marinating, dice up about 4 cloves of garlic. Slice half a lemon—make sure to remove the seeds so it doesn’t turn bitter. Prepare some basil leaves, or if you prefer, you can substitute with cilantro or mint.

Cooking:
-
Heat a pan with a little spray of oil on medium heat. You want to feel the heat above the pan with your hand. Place the wings skin-side down first and let them fry until they're golden and crispy. Flip them to the other side and cook for another 5 to 10 minutes, adjusting the heat as needed.

Add the Aromatics:
-
Once the wings are golden on both sides, add in the garlic, lemon slices, and basil (or your choice of herbs). Don’t forget a drizzle of honey to add that sweet touch. Turn the heat up a bit and stir everything together so the flavors combine and the wings soak up all those juices.

Final Touch:
-
At the very end, turn the heat to high just for a moment to let the wings get a bit more caramelized. Then remove them from the heat and finish with a little drizzle of fresh lemon juice for that refreshing kick.
